Tip 1: Frying oil affects food.
During frying, the oil becomes part of the product and affects flavor, texture and quality. Keep the TPM at a medium level for the best balance between flavor, breading and oil absorption.

Water, oxygen, breading, spices, salt and high temperatures accelerate degradation. Filter the oil regularly, protect it from light and dirt, and avoid overheating to preserve its quality for longer.

Pay attention to signs such as darkening of color, foaming, rancid smell or thicker consistency. But don't change the oil on a hunch - always let the measuring tools give you clear values so that the decision is correct and can be documented.
